By year two, you can convert the bed that had the most weeds, because no-dig handles weed suppression best there. By year three, convert the last bed. Tilling gives you immediate surface tilth, better conditions for root crops, and the ability to fix mistakes fast. If you have the patience to wait a year for a bed to mature, go no-dig for 80 percent of your garden. If you need maximum production from potatoes and carrots this season, till a dedicated section and manage the weeds aggressively. I run both systems every year, and my harvest is better for it.
